Beyond Boxed Mac and Cheese in the Camp Kitchen

This is a bit of history at this point, but I wanted to share one of the great dinners we had when camping in Southern Utah last month.

In the pot are onion, garlic, and zucchini cooked in olive oil with some of our spiced, dried tomatoes added towards the end of cooking.

I tossed this with cheese tortellini and alfredo sauce (both from Costco). It was enjoyed by all. Z added more parmesan. J and I sprinkled on crushed red pepper flakes and ground on some black pepper. I couldn't take a photo of the finished dish because it was so cold outside that we had to eat it fast fast fast!!
